Indeed, I occasionally require it, ideally in the form of <a href=\"http:\/\/www.chrismclaren.com\/blog\/2005\/11\/28\/understanding-the-club\/\">the canonical club sandwich<\/a>.<\/p>\n<p>You might think, then, that see a short, informative video on bacon would be something I would enjoy.<\/p>\n<p><center><object width=\"500\" height=\"405\"><param name=\"movie\" value=\"http:\/\/www.youtube.com\/v\/e0DbcUUO-hI&#038;hl=en&#038;fs=1&#038;rel=0&#038;color1=0x3a3a3a&#038;color2=0x999999&#038;border=1\"><\/param><param name=\"allowFullScreen\" value=\"true\"><\/param><param name=\"allowscriptaccess\" value=\"always\"><\/param><\/object><\/center><\/p>\n<p>As you might guess after watching that, &#8220;I enjoyed that&#8221; was not my immediate reaction. In fact, my immediate reaction was to Google the phrase &#8220;artisanal bacon&#8221;, because that whole &#8220;inject with curing solution, spray paint with liquid smoke&#8221; thing really threw me. <\/p>\n<p>After reading a couple of things, like <a href=\"http:\/\/www.theatlantic.com\/doc\/200511\/better-bacon\">this<\/a> and <a href=\"http:\/\/www.cooksillustrated.com\/tasting.asp?tastingid=190\">this<\/a>, I find myself wondering if I can&#8217;t find some Nova Scotia pig wizard who hand-cures and -smokes his own. I should ask <a href=\"http:\/\/www.foodtv.ca\/ontv\/hostdetails.aspx?hostid=41773\">Chef Craig<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p class=\"excerpt\">I quite like bacon.
